Ingredients (serves 4-5) 1.3L good quality chicken broth 2 bay leaves Zest of 1 lemon 1 tsp black pepper 1 cup long grain rice, rinse first Juice of 1 lemon 2 large eggs 2 cups cooked chicken, shredded Serve with a drizzle of extra virgin olive oil (for those healthy fats) and some dill fronds. 1. To a large pot with a lid, add the chicken stock and place on a medium heat. When hot but not boiling, add the rice, bay leaves, lemon zest and pepper. Give everything a stir and cover. Bring to a steady simmer and cook the rice for about 10 minutes or until tender. 2. Remove from the heat. 3. Make the egg mixture by cracking two eggs into a bowl and whisking until combined and it starts to bubble. Add the lemon juice, whisking between each half. 4. Slowly whisk in 3 large spoonfuls of the broth into the egg mixture (make sure the broth isn’t boiling hot at this point). This will help bring it to temperature. 5. Stir the egg mixture into the pot and cook over a low heat, stirring constantly. Add the chicken and warm through for a couple of minutes until you reach the desired temperature. Do not simmer or bring to a boil as the soup may curdle. 6. @chacekitchen Marry Me Chicken Noodle Soup INGREDIENTS: -2 large carrots, chopped -3 celery stalks, chopped -1 yellow onion, chopped -1 small parsnip, chopped -8 garlic cloves, minced -6 tsp chicken bouillon -6 cups water -1/2 lb noodle of choice (I like small thick noodle for this recipe so I used tubetti rigati) -1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. -4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) -4 tbsp tomato paste -1 tbsp of oil from the sun dried tomato jar -2 tbsp olive oil -1 tbsp butter -1/2 tsp dried oregano -1 tsp Italian seasoning -1 tsp dried parsley -1/2 tsp dried basil -1 tsp salt -1/2 tsp pepper -1/2 tsp red pepper flakes -3/4 cup cream -handful fresh parsley, chopped -handful of fresh basil, chopped -freshly grated parmesan cheese, to top DIRECTIONS: -Heat up 1 tbsp olive oil in a dutch oven or pot over medium high heat. Once pan is hot, add your chicken breasts (seasoned with a little salt and pepper). -Cook for about 3-4 minutes undisturbed before flipping. Cook the other side for about 3-4 minutes on medium/high heat, before turning heat down to medium/low to let the chicken cook through (maybe about 5 more minutes?) without burning the outside. Once chicken is cooked through (use a meat thermometer or cut into it to check), remove from heat and set aside. Once it cools, you will want to cut into small bite size pieces. You can also cube before cooking if you want it to cook faster. -Heat up 1 tbsp olive oil and 1 tbsp sun dried tomato oil in your pot you used to cook the chicken. -Once your pan is hot, sauté the onions for a minute or so before adding in the celery, carrots, and parsnip. Sprinkle a little salt on the veggies to help the reduce moisture. Saute for about 5 minutes or until they start to soften. -Create a space in the pan, add the butter and garlic directly into the butter. Cook for a few more minutes, stirring so garlic doesn’t burn. -Add in tomato paste. Stir in and let cook for a few minutes or until the tomato paste starts to turn a slightly darker color. -Stir in sun dried tomatoes. -Stir in chicken bouillon. -Add water and stir. -Add seasonings (salt, pepper, Italian seasoning, dried parsley, dried basil, dried oregano, red pepper flakes). -Bring to a boil, reduce to a simmer, cover, and let cook for about 10 min. -Add heavy cream -Make sure soup is back to a boil before adding in your pasta. -Cook according to package (al dente). -When pasta has a minute or so left, add in your cubed, cooked chicken. -Add in fresh parsley, fresh basil, and parmesan cheese. #soup #soupseason #soupszn #souprecipe #dinner #dinnerinspo #dinnerideas #dinnerrecipe #recipe #mealinspo #mealidea #cooking #marrymechicken Wondering Why – The Red Clay Strays
