Healthy eaters, rejoice: Chipotle just added cauliflower rice to its menu for 2021!
But just like guac, it will be extra. They’ve even expanded their menu options for vegans and vegetarians, too. Here’s everything you need to know about what the Mexican grill has up its sleeve for the year:

The Denver-based chain announced the news on Twitter January 4th and by press release the same day. The casual Tweet revealed, “We have cilantro-lime cauliflower rice now.” OMG! It quickly garnered over 10,000 likes.
The release revealed more information about the new menu item that was New Year’s Resolution friendly.
“Chipotle fans can start 2021 off right with a new rice option that is compliant with Keto, Whole30, Paleo, Vegan, and Vegetarian diets,” the statement read.

“Cilantro-Lime Cauliflower Rice has four grams of net carbs per serving and puts a delicious twist on Chipotle’s classic white rice recipe by using the same fresh cilantro and lime ingredients, and similar culinary techniques,” it continued. Yum!
The flavored rice alternative is now available at all of Chipotle's roughly 2,700 US and Canada locations for a limited time. The chain had previously tested the rice at select locations last year.
The offering continues a trend of fast food chains adding more plant-based alternatives such as Beyond Meat hamburgers for customers (except for Taco Bell that took potatoes off the menu, much to the chagrin of its vegetarian customers).

The company has also revised its menu for to add vegan or vegetarian bowls made from existing available ingredients. Thank you, Chipotle!
