Crockpot Buffalo Chicken Bowl

Ingredients: 2 chicken breasts, 2 tablespoons ranch seasoning, 1 cup rice.

For the Buffalo sauce: 2 cups cottage cheese, 1/2 cup shredded cheese, 3/4 cup Buffalo wing sauce, 1 tablespoon minced garlic.

Add your chicken breast to the crockpot and sprinkle ranch dressing seasoning. You want to let that cook for four hours on high heat or on low for six. In a separate pot, add one cup of rice with two cups of water. “Let your rice cook on high until the water has been brought to a boil, then cover it and let it simmer on low for about 10 minutes,” he says.

In the meantime, shred the cooked chicken with a fork. Afterwards, you can start on the buffalo sauce. Add some low-fat cottage cheese to a blender, shredded cheese, buffalo wing sauce, and some minced garlic. Add the sauce to the chicken and let that cook on low for about 10 minutes until the cheese has completely melted.

This recipe makes 6 meals and has 500 calories, 50 grams of protein, and 36 grams of carbs.
