Southwest crockpot chicken & rice bowls
Johnny says this meal can help you “lose 10 pounds in a month” and is filled with protein. What’s even better is you can leave the ingredients to cook in a crockpot for several hours while you get other chores done.
Ingredients: 3 lbs. chicken breast, 1 red onion, 2 bell peppers, 3 Roma tomatoes, 2 jalapeño peppers, 1 packet taco seasoning, 3 limes worth of juice, 4 cups bone broth, 2 cups rice.
Johnny starts by chopping all of the vegetables and throwing them into the crockpot along with the chicken breast. Next, he adds the seasonings and lime juice into the crockpot. He lets that cook for 2-3 hours on high heat or on low for 4-6. When the chicken is done cooking, he says to shredded it using forks.
In a separate pot, he pours in the chicken broth and white rice. “Once the rice is done cooking, add it right into the crockpot, then give your ingredients a good mix,” he says.
You can choose to divide the meal into separate containers for your meal prep. One serving size is about 375 calories with a whopping 43 grams of protein.
