Ilana Muhlstein, a dietitian known as @nutritionbabe on TikTok, exemplifies this balance perfectly. During her 100-pound weight loss journey, she discovered a way to enjoy delicious sweets like chocolate banana crepes without compromising her progress.
Muhlstein emphasizes that enjoying sweets is entirely possible while shedding pounds. “On my 100-pound weight loss journey, I never stopped eating sweets. There’s nothing like a good chocolate banana crepe. But when I start with one, I find myself wanting ten. So in order to avoid a plateau, I had to make sure I was finding balance and getting in enough protein,” she explains. To make Ilana’s chocolate banana crepes, you’ll need the following ingredients:
- For the crepe batter:
- 1/2 cup water1/2 cup milk of choice (Ilana uses 2%)1 cup quinoa flour (or whole wheat, corn, buckwheat, or any high-fiber flour)2 eggsFilling of your choice
- In a blender, combine 1/2 cup water, 1/2 cup milk, 1 cup quinoa flour, and 2 eggs.Blend until smooth.
- Heat a pan to low heat and add a small amount of butter or coconut oil.Pour a few tablespoons of the batter into the pan and swirl it to create a thin, even crepe.Cook until the edges start to lift, then flip and cook the other side until lightly browned.
- Fill each crepe with a healthy filling of your choice. Ilana uses her chocolate wonder whip, made from Greek yogurt, monk fruit sweetener, cocoa powder, and a bit of ricotta cheese for a Nutella-like consistency.Roll or fold the crepe and serve.
