High-Protein BBQ Chicken Sandwich

Ingredients: 1 package of coleslaw mix, 3/4 cup light mayonnaise, 2 tablespoons red wine vinegar, 1 tablespoon Dijon mustard, 2 pounds diced chicken breast, 1 container G Hughes BBQ sauce, and 8 low-carb buns toasted.

Instructions: In a crockpot, add 2 pounds of chicken breast, season it with onion powder, garlic powder, chili powder, and 1 whole container of sugar-free BBQ sauce. Let the chicken cook on high for 2-3 hours or on low for 4-6. When the chicken is cooked, go ahead and shred it with forks. In the meantime, toast your buns and make the colesaw mix. In a bowl, add the coleslaw mix, light mayo, red wine vinegar (or apple cider vinegar), and dijon mustard. Mix well. When the buns are done toasting, add a scoop of the chicken on top of a bun and top with the coleslaw.

Each serving contains 391 calories, 50g protein, 13g carbs, and 23g fat.
