Luckily, Courtney Kassis, MS, RD, LDN, a.k.a. @dietitianwithtwins, who successfully lost 55 pounds postpartum, recently shared her favorite high-protein dinner bowl recipe that helped her shed the weight and manage her thyroid condition. When I was in a Hashimoto’s flare, I went completely gluten- & dairy-free. Now that my thyroid function is under control, I am 90% gluten-free, but still incorporate dairy-free recipes like this SO often because they’re just SO good. Recipe: Cooking oil (I’m using avocado oil spray for everything) 1 lb ground beef (I’m using 93% grass-fed beef) 2 small onion, diced 1/2 large sweet potato, cubed 1 cup broccoli, chopped 1 container Noble Made Sloppy Joseph Sauce Scallions & coleslaw mix, for topping Seasonings: sea salt, black pepper, onion powder, garlic powder Start by preparing all ingredients: dice the onion & scallions, cube the sweet potato. Add the sweet potato to the air fryer or oven on 400 F for 17 minutes. Add onion to skillet with ½ tbsp oil/spray over medium heat. After about 3 minutes, add beef. Add broccoli to another skillet with oil/spray over medium heat cooking until fork tender; add sea salt & pepper & cover. Once beef is cooked through, add the container of Sloppy Joe Sauce. Assemble the plate with sweet potato, broccoli & 5 oz beef. Top with scallions & coleslaw mix! Courtney’s Weight Loss Journey

“I lost 55 pounds postpartum, but the beginning of my weight loss journey was so tough,” Courtney explains at the beginning of her video. Despite eating well and exercising, she struggled with inflammation and weight loss. A thyroid condition complicated her journey further. “Postpartum I was eating really well and exercising, but I was really inflamed, and I couldn’t lose weight. When I got my postpartum labs done, my TSH came back at an 18 and my thyroid antibodies were through the roof, meaning I was in a complete autoimmune flare, making it really difficult to lose weight.”

To support her thyroid and kickstart her weight loss, Courtney made significant dietary changes—and one recipe in particular was a game-changer. “The first thing I did to start supporting my thyroid and hopefully start losing weight was pulling out gluten and dairy. And this was one of my favorite recipes at that time. Super high-protein, so easy and so satiating.”

Even after reaching her goal weight and normalizing her thyroid function, Courtney says she continues to enjoy this recipe. “Now because I’ve reached my goal weight and my thyroid is back to normal, I do incorporate dairy more often, but this recipe is still always in the rotation. It is possible to eat your protein bowls without dairy, but you do have to be intentional. Planning and finding high-protein recipes like this one is a must.”

High-Protein Dinner Bowl Recipe

Ingredients:

  • Cooking oil (Courtney uses avocado oil spray for everything)
  • 1 lb ground beef (93% grass-fed beef)
  • 2 small onions, diced
  • 1/2 large sweet potato, cubed
  • 1 cup broccoli, chopped
  • 1 container Noble Made Sloppy Joseph Sauce
  • Scallions and coleslaw mix, for topping
  • Seasonings: sea salt, black pepper, onion powder, garlic powder

Instructions:

  1. Prepare all ingredients: dice the onion and scallions, and cube the sweet potato.
  2. Add the sweet potato to the air fryer or oven at 400°F for 17 minutes.
  3. Add the diced onion to a skillet with ½ tbsp oil/spray over medium heat. After about 3 minutes, add the ground beef.
  4. In another skillet, add the chopped broccoli with oil/spray over medium heat. Cook until fork-tender, adding sea salt and pepper, then cover.
  5. Once the beef is cooked through, add the container of Sloppy Joe Sauce.
  6. Assemble the plate with sweet potato, broccoli, and 5 oz of beef. Top with scallions and coleslaw mix.
