Nutritionist Who Lost 55-Lb Postpartum Shares Her Favorite High-Protein Dinner Bowl Recipe For Weight Loss: ‘So Easy And Satiating’

Luckily, Courtney Kassis, MS, RD, LDN, a.k.a. @dietitianwithtwins, who successfully lost 55 pounds postpartum, recently shared her favorite high-protein dinner bowl recipe that helped her shed the weight and manage her thyroid condition. It’s a delicious, nutrient-packed recipe that features beef, sweet potatoes, and broccoli. Find all the details below.
“I lost 55 pounds postpartum, but the beginning of my weight loss journey was so tough,” Courtney explains at the beginning of her video. Despite eating well and exercising, she struggled with inflammation and weight loss. A thyroid condition complicated her journey further. “Postpartum I was eating really well and exercising, but I was really inflamed, and I couldn’t lose weight. When I got my postpartum labs done, my TSH came back at an 18 and my thyroid antibodies were through the roof, meaning I was in a complete autoimmune flare, making it really difficult to lose weight.”
To support her thyroid and kickstart her weight loss, Courtney made significant dietary changes—and one recipe in particular was a game-changer. “The first thing I did to start supporting my thyroid and hopefully start losing weight was pulling out gluten and dairy. And this was one of my favorite recipes at that time. Super high-protein, so easy and so satiating.”
Even after reaching her goal weight and normalizing her thyroid function, Courtney says she continues to enjoy this recipe. “Now because I’ve reached my goal weight and my thyroid is back to normal, I do incorporate dairy more often, but this recipe is still always in the rotation. It is possible to eat your protein bowls without dairy, but you do have to be intentional. Planning and finding high-protein recipes like this one is a must.”
