Eggs are already packed with benefits, but she kicks things up a notch. She unveils a simple yet ingenious addition to the classic scrambled eggs—cottage cheese. “Add cottage cheese to scrambled eggs. It makes them fluffier and adds 13g of protein,” Grasso shares.

After incorporating the cottage cheese, Grasso adds a vibrant mix of spinach and chopped tomatoes to the egg mixture. A quick whisk combines all the ingredients seamlessly. In a pan, she sautés mushrooms until tender, creating a savory addition to the egg scramble.
As the eggs and veggies come together, Grasso reveals her next hack: placing a tortilla directly over the egg mixture. This not only streamlines the process but also serves as an easy way to hold the veggies in a burrito. She expertly flips the tortilla so that it’s on the pan, with the egg mixture on top. A generous sprinkle of cheese adds a touch of indulgence to the dish.
