TikTok Is Going Crazy For This High-Protein, High-Fiber Breakfast Recipe Using Beans: ‘This Looks So Good’

In a breakfast rut? Look no further than a bean-forward recipe dietitian Steph Grasso recently shared on TikTok. Not only is it healthy, but it’s also delicious. Grasso says she craves it as soon as she wakes up, and the comments confirm that it’s totally crave-worthy. Find all the details below.

Grasso’s high-protein, high-fiber breakfast proves that wholesome eating can be both simple and sensational. At the heart of her breakfast creation? Beans–a humble yet mighty ingredient packed with protein, fiber, and an array of health benefits. As Grasso demonstrates, these legumes serve as the perfect foundation for a satisfying morning meal that not only satisfies your taste buds but also nourishes your body from within.

First, Grasso instructs, “Make sure to wash your beans.” After this, she adds her beans to a pan, and, in her words, “seasons the heck out of them” using Trader Joe’s Green Goddess seasoning, along with salt and pepper. (Shoutout to TJ’s for all of those tasty blends!) 

“Then we’re going to add canned diced tomatoes with the juices,” she continues. “I’m using about half a can.” From there, she says, you should make a well, add in your eggs to the middle, and “let her cook.”

But it doesn't stop there! Grasso also adds sauerkraut to the mix for an extra dose of gut-friendly probiotics. When complete, the breakfast certainly looks delicious. But beyond that, it offers great nutritional value. Grasso points out the impressive health benefits, noting that it packs in twenty-six grams of protein, fifteen grams of fiber.

"I can eat this whole thing in one sitting," she raves. "Cheers to the year of the bean!"
