Jalapeño popper casserole recipe
In an oven-safe dish, combine 6 cups of broccoli and 1.5 pounds of chopped chicken. In a blender, blend 1 1/3 cups of cottage cheese, 1/2 cup of whipped cream cheese, and 1/4 cup of 2% milk until smooth. Pour this mixture over the broccoli and chicken, then season with garlic, salt, and pepper, mixing everything well. For the toppings, add 1 sliced jalapeño, four chopped bacon slices, and 1/4 cup of shredded cheese.
Now, it’s time to bake at 375 degrees for 15 minutes. Once your timer is done, you can take out the casserole and serve!
Dr. Paul says that this recipe contains four servings, each containing 490 calories and 44 grams of protein.
Weight loss benefits
This is a perfect meal for those who don’t want to spend too much time cooking in the kitchen!
The high protein content comes easy, as you can prepare the chicken ahead of time or use leftover chicken. Cottage cheese and bacon also help to boost up the protein content.
Ingredients such as broccoli and jalapeños can also be bought pre-chopped, saving you even more time while making the meal more nutritious.
Since everything is combined in one oven-safe dish, there’s minimal cleanup involved and it's ideal for those who want to whip up a meal without too much hassle.
