Ramen noodles have become a popular household staple, appearing everywhere—from creamy carbonara to ultra-spicy versions on our TikTok For You page. However, many health experts warn against these popular soupy snacks due to their high sodium content, additives, preservatives, and unhealthy fats. Just one look at the ingredients list will show you a bunch of words you can hardly pronounce!

Fortunately, healthier alternatives are available! Mayra Wendolyne, a content creator who shares low-carb weight loss recipes, posted her delicious low-carb creamy ramen noodle recipe that’s packed with protein and collagen.

Low-carb creamy ramen noodles

Mayra says that this recipe is “full of collagen and protein, and it honestly hits the spot with the cold weather.”

Ingredients: Avocado oil, onion, garlic, Kettle & Fire chicken bone broth, salt & pepper, mushrooms, bok choy, low carb ramen, egg, mayonnaise, Sriracha. Toppings: green onion, pork belly, and chili oil.

In a small pan, Mayra sautés some onion and garlic. Instead of using water, she opts for bone broth, which will add about 80 grams of protein to the mix. Mayra then seasons the mix with garlic powder, onion powder, salt, pepper, and optional chicken bouillon. For veggies, she chooses mushrooms and bok choy. Once the vegetables soften, she adds the low-carb noodles.

For the creamy sauce mixture, she mixes one egg, some mayo, and chili oil in a bowl, whisking it all together before adding it to the simmering pan. After the noodles finish cooking, she scoops them out into a bowl along with the vegetables and slowly pours in the broth. She tops the ramen with green onions, pork belly, boiled eggs, and chili oil. And that’s it!

Why this recipe is a healthier ramen noodle alternative

This version of ramen noodles is a healthier option for a few reasons. Instead of using the standard ramen noodle pack, which is often high in refined carbs, Mayra’s recipe uses a low-carb noodle, making it a healthier choice between the two.

This will reduce your carb intake, which can aid in blood sugar management and weight loss.

The use of the bone broth adds protein and collagen to the mix, which can support muscle health, skin health, and joint health.
