Nacho Chicken and Rice Bowls

This meal is a great choice because it’s a simple and convenient recipe that makes it easier to stay consistent with your weight loss goals and “lasts all week long!”

Ingredients: 2 pounds of chicken breast, 1 pack of taco seasoning, 2 bell peppers, 1 jalapeño, 1 red onion, rice, low-fat cottage cheese, shredded cheese, one 10 oz. can of green chilis, 1 lime worth of lime juice, and milk.

In a crockpot, add 2 pounds of chicken breast along with 1 pack of taco seasoning. For the veggies, dice 2 bell peppers, 1 jalapeño, and 1 red onion and add them to a crockpot. Let that cook on high for 2-3 hours or on low for 4-5 hours. When the chicken is cooked through, shred it up.

To prepare the rice, combine 2 cups of water and 1 cup of white rice in a saucepan. For the cheese sauce, blend 2 cups of low-fat cottage cheese, 2 cups of shredded cheese, a 10 oz. can of green chilis, and the juice of one lime until smooth. Add a splash of milk to reach your desired consistency.

When the rice is done cooking, grab your meal prep containers and add a scoop of rice to each container. Top that off with the chicken, the cheese sauce, and fresh diced cilantro. All done!

This recipe contains 470 calories per serving with 50 grams of protein and 36 grams of carbs.
