Chicken Beet Power Bowl

Harper begins by chopping up some beets and oranges. She then thinly slices some onions, and a tablespoon of her homemade honey lemon Dijon vinaigrette. She mixes those together and chills the salad in the fridge. For the chicken, which will be the main source of protein, she makes a marinade with olive oil, pepper, oregano, thyme, garlic powder, sea salt, lemon juice, and zest. She coats the chicken breasts and cooks them thoroughly. For some greens, green beans are boiled, salted, and set aside.

Now it’s time to assemble! Harper layers a generous amount of pre-cooked quinoa on a plate, then adds the green beans, beet-orange salad, chicken, avocado, and a drizzle of more vinaigrette. Simple and so healthy!
