Ingredients:
- 2-3 cups cooked chicken, shredded or chopped½ cup Greek yogurt (packed with benefits!) or sour cream½ pack fajita seasoning1-2 tbsp queso (it’s fine, treat yourself!)Salsa to taste2 light Laughing Cow cheese wedges5-6 low-calorie tortillas1 tbsp salsa con queso per enchilada1 tbsp white queso per enchiladaLight shredded cheese6 Doritos, crushed
Instructions:
Prepare the Filling: In a large mixing bowl, combine the cooked chicken, Greek yogurt (or sour cream), fajita seasoning, queso, salsa, and Laughing Cow cheese. Mix well until all ingredients are evenly distributed.Assemble the Enchiladas: Place a generous portion of the chicken mixture onto each tortilla.
