Mayorquin begins her TikTok tutorial by boiling chicken along with fresh tomatoes, onions, serrano pepper, and garlic, emphasizing the use of whole ingredients for maximum nutritional value. “In the same pot I boiled the chicken I’m adding 3 tomatoes quarter of a white onion and one serrano pepper, one garlic clove,” she explains. Adding vegetables into the dish can add vitamins, minerals, and fiber.
Next up, Mayorquin throws the veggies into a blender with a cup of broth and a half tablespoon of chicken bouillon. “Blend then pour it in a pot. Add a little bit of oregano keep it on low heat,” she instructs.
Mayorquin’s attention to portion control further enhances the dish’s benefits, as she meticulously weighs out 120 grams of boneless chicken breast and 60 grams of boiled gold potatoes before mashing them together. These lean protein and complex carbohydrate sources promote satiety and sustained energy, essential factors for successful weight management.
Incorporating Romero’s corn tortillas, Mayorquin opts for low-calorie options that still deliver on taste and texture. Her method of steaming the tortillas in the microwave before crisping the tacos in an air fryer (after folding the chicken mixture in) with a touch of avocado oil ensures a satisfying crunch without excess grease. “These are my favorite low-calorie tortillas. They are so good,” she raves.
