Her favorite recipe to help speed up fat loss is her homemade Metabolism-Torching Mexican Chile Soup. She explains another advantage of her recipe: “Even better, broth-based soups with lots of vegetables and lean protein will keep you full for a long period of time!”
Ingredients:
- 2 dried ancho chiles, stems and seeds removed
- 3 dried guajillo chiles, stems and seeds removed
- 2 lb cooked chicken breast, shredded
- 4-6 cups chicken broth
- 1¾ cups pinto beans
- 1¾ cups corn
- 1/2 chopped onion
- 3 cloves garlic
- 1 tsp dried oregano
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp ground cumin
- 1/8 tsp ground cloves
Optional garnishes: avocado, lime wedges, or cilantro
How to make it:
Simmer chiles covered in water for about 10 minutes or until soft. Blend chiles and water in a blender with oregano, sea salt, black pepper, onion, garlic, cumin, and cloves.
Add the chile mixture and the remaining ingredients to a saucepan and simmer for 10-20 minutes (or cook in slow cooker on low for 4-5 hours). Serve with optional garnishes.
