In a recent TikTok video, Angelique shared her excitement about finding a thick high-protein Greek yogurt and used it to craft a delectable Greek yogurt cheesecake. “Girls! We’ve finally got some gorgeous thick high protein Greek yoghurt in this country and I am so frikkin’ happy!! This is the stuff low-cal desserts are made of!” the caption reads. Here’s how to make this delicious and healthy treat.
Prepare the Jam:
- Microwave 150 grams of mixed berries for 60 seconds.Sprinkle over 8 grams of gelatin and sweetener (optional), mixing well.Allow the mixture to cool in the fridge to set into jam.
Make the Cake:
- Add 400 grams of Greek yogurt to a bowl.Whisk in 2 whole eggs and 1 egg white until the mixture is smooth.Add 15 grams of sweetener, 2 teaspoons of vanilla essence, and 40 grams of sifted maizena to the mixture, ensuring there are no lumps.Pour the mixture into a round cake tin lined with baking paper.Bake in an air fryer or oven at 170°C for 20-25 minutes or until the middle is set and the top is golden.Allow the cake to cool, then set in the fridge for an hour. Note that it will deflate slightly once cooled.Top with the low-cal jam or fresh fruit, sprinkle with low-calorie icing sugar, and slice into 8 pieces.
