A Dietitian Reveals The Tasty, High-Fiber Cookie Dough Bars She Swears By: ‘You’re Gonna Have Protein And Fiber Without Even Knowing’

Healthy, sweet bars can be a great option for a convenient and nutritious snack or meal replacement. These bars are designed to provide a balanced combination of protein, fiber, and other essential nutrients, making them suitable for supporting satiety, blood sugar control, and overall health.
Registered dietitian, Pilates instructor, and TikTok creator Nicole Hoskens, MS, RD, shared a recipe for no-bake chocolate chip cookie dough bars that are high in fiber and protein and also delicious.
Nicole starts by taking a big bowl and adding 1/2 cup of protein powder, 1 3/4 oat flour, a pinch of salt, 1/4 teaspoon of baking soda, a dash of vanilla, and 1/2 cup of peanut butter, as well as any milk of your choice, whether it’s oat, soy, or almond milk. Nicole went for 1/4 cup of soy milk.
The sweetener she used was maple syrup, and she notes that “this is where you’re going to get your carbohydrates for energy.” She does emphasize that, if you want to use a low-calorie sweetener, make sure it’s in liquid form for this specific recipe.
The last ingredient is chocolate chips, and the specific ones she used have no sugar added to them but still taste sweet like regular chocolate chips and are high in protein and fiber, which she says, when paired together, “make you full for longer.”
After thoroughly mixing all the ingredients, Nicole proceeds to prepare a 9 x 13 rectangular glass dish. She lines it with plastic wrap, creating a mold that facilitates easy removal later. Gently pressing the batter into the dish, she then refrigerates it, allowing it to chill for several hours until set.
Nicole takes out the chocolate chip cookie dough bars the next day, cuts them into small squares, and enjoy!
