5-Ingredient Pumpkin Greek Yogurt Oat Cups For Weight Loss

Ingredients: 1 cup pumpkin puree, 1 cup @chobani greek yogurt, 2 @vitalfarms eggs, 1/3 cup maple syrup or honey, 1 1/2 @bobsredmill cups rolled oats, 1 cup oat flour (you can sub for AP flour), 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, and 1/2 cup chocolate chips.

Instructions: Start by preheating your oven to 350F. ⁣Add your pumpkin puree in a large bowl, then add in your Greek yogurt. Stir well then add in your maple syrup and eggs. Mix well. In a separate bowl, add all your dry ingredients and mix until combined. Add your dry ingredients to the wet and mix to combine. Line a muffin tin, and using a 1″ cookie scoop, add about 1 scoop to each muffin tin. They should be about 3/4 the way full. Bake on 350F for 25 minutes or until completely cooked through. ⁣

Meredith also notes that these cups are gluten-free, refined sugar-free, and “perfect for breakfast or snacks on the go!”
