As its name implies, there are just three main ingredients in this turkey vegetable soup: cooked turkey, a can of mixed vegetables and chicken broth. That’s literally all you need.

And the directions are very straightforward, leaving plenty of room for substitution. If you have cooked vegetables sitting in your fridge, you can use those instead of the canned version. Prefer a vegetarian option? Swap out the turkey for tofu and the chicken broth for a veggie alternative. The directions remain the same.
